Gorgonzola Stuffed Dates with Spiced Honey

I’ve been noticing figs and dates stuffed with cheese (usually goat or blue-cheese) on a lot of restaurant menus lately. Sometimes it’s combined with bacon or pancetta, and usually topped with reduced balsamic or honey. Recently, I was shopping at Whole Foods, and noticed Medjool Dates in the produce section and decided to use them for a quick appetizer. I wanted the sweet dates combined with a somewhat salty cheese, and liked the idea of a sweet-spicy sauce to go with them.

To make them, simply cut fresh dates in half and remove the seed. Stuff with a nice quality gorgonzola.  For the sauce, combine:

  • 2 Tbsp. honey
  • 1 tsp. hot sauce (I used Crystal hot sauce – use more or less to taste)

Drizzle the sauce on the figs and serve.
